Egg Hash

So first off you may look at this picture and go man..her stove is gross..and it is..I need to clean! Anyways, This is a new idea for me and its simple. All I did was grate up some potato and add a beaten egg. Then I pan fried in EVOO until golden. It was so good and filling..Although some cheese and broccoli would have made it AMAZING!

Bread and Soup


I was hungry the other night but didn't really feel like cooking at all. So i quickly opened a can of 98% fat free broccoli and cheese soup microwaved it and added some parm. I ate it with a hunk of baguette.

A Disney Pasta Dinner

So I wish all of our dinners could look like this. These dinners were served on our Simba and Ariel children's plate and bowel sets. It keeps the portions small and forces me to add the fruits and veggies. Mine is the one on the left. It has cucumber and a little sour cream ranch, strawberries, and pasta with a mix of garlic alfredo and EVOO. Meatlover has spaghetti minus the meat, carrots, and strawberries. Meatlover would have had meat but I forgot to make it. UH OH..my bad!

Chocolate Time


So for the last few days I have been CRAVING chocolate and if you are a lady like me you know why. Anyways, Meatlover being the sweet boyfriend he is stopped by the candy isle on his way home and brought me these..yah..I think Im going to keep him! :)

Rachael Ray Recipe ala Veggie (me)

I was watching Rachael Ray the other day while sick and she was making Honey Mustard Chicken. I was inspired and said, Hey I can do that! So on Saturday morning I did. My recipe is a little different then hers though as I didn't have parsnips I just used potatoes. I also substituted soy sauce for Worcestershire. I'm not sure if they are at all close but it still worked. My family all tried it and said the chicken needed to simmer longer with sauce and that the veggies needed some more time on the heat to soften up more. Over all it was a big hit and something I may alter to be more veggie friendly..why not!

Subtastic Lunch for Mealover




Here is the lunch I referenced in the last post. While doing our midnight shopping run the other day we picked up some sub loafs on the clearance bakery cart. I thought oh that would be great for his lunches so we picked them up. I used them to make this lunch. On his sub there is honey ham and turkey as well as some provolone cheese and onion. In his small container he had a navel orange pre pealed and some carrots. He later told me the sub was amazing but needed something else. Maybe I need to buy some lettuce or other veggies to fill it out a bit. He also mentioned he was still hungry so he bought a yogurt to go with his food. I figured out why too. I usually add pistachios or sunflower seeds to his meal to add more protein and fiber, but I forgot to on this day.

Oranges!!


Right now Meatlover is really into oranges, and so am I, which is odd for me. I am not usually an orange person but these great big navel oranges are yummy. So this week I made Meatlovers lunch the night before and had it in the fridge waiting for him in the morning. I showed it to him and he immediately wanted the orange I had pealed for his lunch. Instead of giving it to him I pealed him another and he had it as a late night snack. Its so easy to get him to eat them, I wish I could be more like that. I may go eat one soon too. Sounds good.

Cheese and Cracker Dinner


Whist I was sick I found myself eating a TON of cheese and crackers. I bought the multigrain like club crackers and they are so good. The texture is perfect for adding cheese. So Thursday night as I was feeling quite a bit better I made this for myself. I love all of the colors, flavors, and textures I have on this little pink plate. It made for a very pleasing meal, and remarkably filling. I had three kinds of cheese that I originally bought to make that killer grilled cheese but just folded apart for the crackers. I also had carrots and strawberries with Nutella.

Rice and Peas...and SALT


I was sick both Wed and Thurs of this last week which was no fun. On Wed Meatlover had the day off so he spent the day taking care of me and made me some yummy grilled cheese and tomato soup that I didn't take a picture of it was very yummy. Unfortunately he had to go back to work on Thurs so it was up to me to make food for my sensitive sick tummy with only my foggy sick brain to work with. I decided on brown rice, it cooks itself, how could I mess it up? Well one word..SALT, and oil, but mostly salt. You see meatlover made some really yummy rice on Wed for himself and he said he added a bit of EVOO to the water while it was cooking. So I did the same thing Thurs. I also, with my sickly brain, thought well ill just add a bit of salt as well. I added a ton I guess because my final product was slimy (oily) and like the ocean salty! It was also still kinda crunchy so I don't know what all went wrong but the only good part about this meal was the peas. This is why you don't let sick people cook.

Heart-attack-waiting-to-happen Grilled Cheese


Omg people let me just tell u this is something my family came up with and it is just amazing. It is by no means healthy, but oh so ooey gooey good! You start with sliced sourdough bread, I know what your thinking..YUMMM! Then you add your favorite 4 to 5 melting cheeses. I usually add provolone, pepper jack, mozzarella, Colby jack, and sometimes cheddar. Then u just make it like your normal grilled cheese but with a lower heat so the cheese can all melt. It is just so good with a little mustard or sour cream. YUMM! In the picture above I made it with leftovers so there isnt as much cheese as normal.

So Meatlover has been doing so well over this whole transition into better food..even more so then me. I will admit it. That is why I decided to treat him to a sinful lunch the other day. He got pepperoni pizza and Doritos chips in his main container and some applesauce, because come on now lets not go crazy. LOL! He said it was really good, but not nearly as filling as normal. Thats because he was lacking FIBER. But hey it was only one day and its always nice to get a little treat.
