Meatlovers Bits and Pieces Dinner

Meatlover has to work today so of course I whipped up a quick dinner for him. Today's dinner is a little different from his normal meal. I used a lot of bits and pieces that we had laying around and I hope its enough to fill him up. Today his dinner includes: 2 hard boiled eggs, super sharp cheddar cheese, summer sausage, crackers, a small handful of pistachios, carrots and green grapes. I tried to get it to all fit in his little lunch box (I bought it here) but it wouldn't so I had to use a baggie. I'm thinking about purchasing reusable bags for his meals. (Like these here)

Lunch for Peahater


This weekend meatlover and I are taking care of my little 13 yr old sister who for the purpose of this blog will be called peahater. Today I made lunch for everyone and tried to make it healthy and filling since I knew it was most likely going to be a late supper tonight due to me trying to finish papers for my class finals. Above is a picture of her lunch. She had ham and cheese sandwich on potato bread, which she thought was weird and yellow, peas and corn, and applesauce. She loved the applesauce and corn but refused to eat more then one pea. Oh well!

Super Sharp Cheddar Im So There!!

Meatlover and decided to share a little snack today. We bought some SUPER SHARP CHEDDAR yesterday and let me just say YUMM. I love cheese, just about every kind I have ever tried. Its a good source of protein and unfortunately fat. Meatlover also bought some summer sausage and said it was good. I think I may pack some in his lunch soon so you may see it show up on here again.

Pizza Pockets

Last night for supper I felt like making something new. This is my attempt at making a calzone/ pizza pocket type of thing. It was very good and more filling then my normal 4 slices of pizza. Mine were just cheese but Meatlover had some honey ham in his although he says pepperoni would have been better. I think I may try spinach in mine next time. This was my first time making this and I just made it up so Ill post the recipe below if you would like to try it.
Pizza Pockets
(Makes 4 pockets)

INGREDIENTS:
1 Refrigerated pizza dough in a tube
1 can pizza sauce
grated mozzarella cheese
Parmesan cheese
Italian seasoning
Garlic powder/salt
Pizza Toppings (Any you would like)
Cooking spray

DIRECTIONS:
Start by unfolding pizza dough and cutting it into 4 even rectangles. Then take one piece and roll it out until it is about 5 by 7 inches. Some may be a little bigger or smaller. Spray cookie sheet with cooking spray (I used olive oil spray) and place your dough on it. Place sauce, cheese, and toppings on half the dough but careful not to go all the way to the ends. Fold over the dough and use a fork to seal the ends. Take your fork and stab small holes into the top for the steam to escape. Then add parmesan, mozzarella, Italian seasoning, and garlic powder/salt to the top of each pocket. Bake at 450 for about 10mins or until golden brown.

Meatlover Heresy


Here is meatlovers pre-dinner snack, PEARS!!! Actually its not all that surprising as meatlover really loves canned pears so I make sure to keep them around the house. This happens to be our last can. :( Meatlover has suggested we get the pears in juice as apposed to light syrup. He finds these a bit too sweet.

My Eggtastic Lunch


As a vegetarian one of my biggest struggles is eating enough protein so I try to always have eggs handy. Today I made a lunch that has become a favorite of mine for the last month, fried eggs and English muffins. I fry my eggs with a little EVOO but leave the yolk gooey. Today I decided to add some frozen peas to the mix. It was so delicious and filling. I love dipping my muffin in the yolk its so creamy. Whats your favorite way to eat eggs?

First Post

Okay first post! For you to fully understand the meaning of this blog you need to know who veggie and the meat lover are. My name is Emaline and I am the veggie. I have been a vegetarian since 2003. Im not a veggie because I don't want you to kill the animals and blah blah blah (I mean lets not be mean to them but you know they are lower on the food chain and I accept that)..I just don't like it. In 2008 I met my boyfriend Matt (the meat lover) and fell in love. We just moved into an apartment together in Jan 2011 and well lets just say we are still working out how to make food that is both healthy and delicious for both of us.

Meatlover works full time so most days I pack him a lunch to take with him. I like to be creative with it and use as little waste as possible (ie. plastic baggies). I also want his meal to be healthy and delicious. I will be posting pictures of his lunch on this blog.

We are both trying to lose some weight around here as well so I need to kick the junk and eat better food. This blog is sort of a food diary so I don't let myself slip up. You will probably be seeing pictures of my food as well.
